Dried organic blueberry pomace
The blueberry, i.e. bilberry (Vaccinium myrtillus) from the Ericaceae heather family. Fruits intended for dried organic blueberry pomace come from ecological areas. The dried fruit is obtained from washed, crushed, squeezed blackberries, which are then air-dried. Due to their natural origin, the fruit is not subjected to any agrotechnical treatments. They are not fertilised or sprayed with chemicals.
The dried product with moisture < 12% contains 6.4-7.5% total protein, 2-3% crude fat, 30-32% crude fibre, 1-1.2% soluble sugars; max. 5-6% ash, including mineral compounds: 0.24-0.26% calcium; 0.23-0.25% phosphorus; 0.08-0.1% magnesium. Due to the high content of fatty acids, blueberry pomace is a good source of energy and essential unsaturated fatty acids (EFAs), including oleic acid (C18:1; 9.66%), linoleic acid (C18:2; 56.82%), alpha-linolenic acid (C18:1; 15.5%). In addition, blueberries contain valuable vitamins, including vitamin A (52.2 IU/kg) and vitamin E (54.9 mg/kg).
a) The product is not intended for direct consumption; it is a raw material for further processing. Both the fruit and the leaves have been used since the 16th century to treat various ailments, especially diarrhoea, mouth and throat infections, poor circulation and vision problems.
Use of dried blackberries:
a) as a flavouring, colouring agent and as a filler in fruit tea compositions – no more than 50% of the finished product,
b) as a source of natural fibre for the production of bars, cookies, muesli, dietary preparations, desserts, dairy products, in dietary supplements – dose consistent with the principles of good manufacturing practice,
c) as a product restoring flavonoid pigments, aromatic substances and other biologically active compounds,
d) as a source of pectin,
e) as an ingredient in processed foods,
f) as an ingredient in food additives.
