Dried organic raspberry pomace
Fruit intended for dried organic raspberry pomace comes from certified organic plantations. Organic cultivation methods are considered environmentally friendly. A distinctive feature of this dried organic fruit pomace is that it contains less nitrates (V) and nitrites (III) and pesticide residues, but more vitamin C and other vitamins, total sugars, valuable protein. This is the reason for increased demand for organic food from controlled and safe production. The dried product with moisture content < 12% contains in its composition: 6-9% total protein, 12.0-13.0% crude fat, 44-46% crude fiber, 1.3% ash, and also contains 0.12% calcium, 0.20% phosphorus. In the chemical composition of raspberry pomace, particular attention should be paid to the high content of nitrogen-free extractive compounds in the form of sugars, pectins and organic acids, flavonoids and vitamins compared to other ingredients. The research results confirm the influence of organic acids and phenolic acids contained in raspberry pomace on its palatability. Raspberry pomace is characterised by a high content of neutral detergent fibre (NDF), on average approx. 35.0%. This fraction with a low level of lignin is digested by microorganisms in the cecum and colon. Fibre from raspberry pomace is a natural buffer, stabilising the pH of the food content in the intestines, which ensures proper transformations in the colon. Dried raspberry pomace is used:
a) as a source of natural fibre – for the production of bars, biscuits, muesli, dietary preparations, desserts, dairy products, in dietary supplements – dose in accordance with the principles of good manufacturing practice,
b) as a product for the recovery of aromatic substances and other biologically active compounds,
c) as a source of pectins,
d) as an ingredient in jams.
